Cuboidelepipedd shaped, with squared edges and corners.
Pale yellow to white colour. Small irregularly distributed eyes, no crystals.
Firm and easy to cut texture, not very stringy, holds its shape, not very crumbly, creamy, soluble and slightly moist.
Moderate smell with hints of fresh milk, butter and roasted dried fruits.
Moderate aroma of milk, with hints of butter, curd and freshly cut grass.
Dairy flavours with a hint of butter and a sharp twist characteristic of Mahón-Menorca.
