Unpasteurised cow’s milk, stabiliser: calcium chloride, rennet extract, lactic fermenting agents (MILK), anti-butyric salt, salt. Rind (not edible): olive oil, paprika.
Contains milk, lactose and dairy traces.
Cuboidelepiped shaped, with rounded edges and corners.
Brownish yellow colour. Very small irregularly distributed eyes with crystals.
Very firm and hard texture. Crumbles when cut. Grainy.
Strong smell with hints of fresh milk, curd, leather, meat broth, olive oil and rind.
Strong and intense aroma with hints of aged wood, leather, ripening cellars, olive oil and roasted dried fruits.
Well-balanced salty and moderately sharp flavour. A long-lasting, crisp, sweet and slightly salty aftertaste.
