Made using unpasteurised milk directly from the farm and using a fogasser (cotton cloth) to give it shape.
Characteristic and unmistakable. The rind is orange, or brown if artisan. Firm and easy to cut, pale yellow in colour with small irregularly distributed “eyes”. Developed dairy aromas and flavours, with hints of butter and roasted dried fruits (hazelnuts), a persistent aftertaste and an aroma typical of Mahón-Menorca cheese. (2-5 months).
