Mercadal Cured CheeseMahón-Menorca cheese - pasteurised milk
Made using unpasteurised milk directly from the farm and using a fogasser (cotton cloth) to give it shape.
With a firm and hard texture, brownish yellow in colour. Intense flavours and aromas with hints of aged wood, leather and ripening cellars.
A long-lasting, crisp, sweet and slightly salty aftertaste.
A spiciness is often detected.
