Semi-cured cheese with a smooth texture.
Pasteurised cow’s milk.
Ripening process: 2-5 months.
Best consumed within: 12 months.
Storage temperature: 0-8ºC.
Pasteurised cow’s milk, stabiliser: calcium chloride, rennet extract, E-1105 (EGG), lactic fermenting agents (MILK), salt. Rind (not edible): preservatives (E-202, E-235), colourant (E-172).
Contains milk and egg.
Cuboidelepiped shaped, with squared edges and corners.
Cream colour – off white or more intense yellow depending on the length of the ripening process. Small irregularly distributed eyes, no crystals.
Firm and easy to cut texture, not very stringy, holds its shape, not very crumbly, creamy, soluble and slightly moist.
Moderate smell with hints of fresh milk, butter and roasted dried nuts.
Moderate aroma of milk, with hints of butter, curd and freshly cut grass.
Moderately sharp and salty balanced flavour. An aftertaste with hints of yoghurt, soft caramel and olive oil.
Pale yellow rind.
